Abstract:
The fructosyltransferase (FTase, E.C.2.4.1.9), produced by Aspergillus oryzae IPT-301, has the ability to produce fructooligosaccharides (FOS), fructose oligomers with prebiotic properties. The objective of this work was to study the production of extracellular FTase by constructing the growth curve from Aspergillus oryzae IPT-301 of this strain and to evaluate the fermentation time influence on this enzyme activities. During the growth process there was a maximum biomass formation of 9.35 ± 1.26 g.L-1 in 48 hours of fermentation and final fermentation broth pH was 4.82. The optimum fermentation time can be observed in 64 hours, due to the high transfructosylation activity (19.76 ± 0.56 U.mL-1), low hydrolytic activity (1.65 ± 0.31 U.mL-1) and higher At/Ah ratio (12.22 ± 1.82).
